Beef meatballs with konjac rice

Ingredients:

-1 pound ground beef (500 g)

- 1 small onion, finely chopped

-1 small garlic clove, minced

-1 large egg

- 1 green onion (only the green part)

- Spices (salt, pepper, garlic powder)

- 8 ounces konjac rice (250 g)

- 3 tablespoons finely chopped flat-leaf parsley and dill

How to prepare:

1.Preheat the oven to 180oC/350oF/Gas 4.

2.Rinse the rice with cold water and leave to drain in a sieve.

3.Mince your onion and garlic or put them in a food processor if you don’t want to chop them.

4.Add all the ingredients in a large bowl and mix together (you can also mix by hand).

5. Form mixture into 1-20 meatballs and place on prepared pan.

6.Bake in centre of preheated oven until juices run clear, 18 to 20 minutes.
