Lemon Cheesecake

Ingredients for the sponge

-2 egg

- 2 tbsp oat bran

- 3-4 tbsp sweetener / sugar

- ¼ tsp bicarbonate

Cheesecake ingredients

-500 g low-fat cheese

- 150 g fat Greek yogurt

- 2 eggs

- half a lime juice

- half lemon juice

-1 tsp grated lemon peel or lemon essence if needed

- 4-5 tbsp sweetener / sugar

How to prepare

Preheat the oven to 180oC/350oF/Gas 4

For the sponge, separate the egg whites from the yolks. Beat the whites with a pinch of salt.

 Mix remaining ingredients in a separate bowl.Fold whites into the other composition.

Put the composition on a tray (about 22 cm diameter) and bake it in the oven for 10-12 min.

Meanwhile prepare the cheese filling.  In a bowl mix cheese with eggs, lime and lemon juice, lemon zest and sweetener. Homogenized composition really well then pour into pan over your baked sponge.

Bake it in the oven for about 40-45 minutes then leave it to cool before eating.
