Egg White Frittata

This recipe can be easily addapted for Atack phase or PP days if you don`t use mushrooms.

Ingredients:

-1 cup sliced fresh mushrooms

- 1/2 medium onion (or green onion), diced

- 100 g turkey ham

-  1/4 teaspoon salt

-  1/4 teaspoon dried oregano

-  Dash pepper

-  5 egg whites, beaten

- 2 tbsp fat free cheese (optional)

How to prepare:

Preheat oven to 325 degrees F.

In an ovenproof skillet, saute the mushrooms, onion, turkey ham, salt, oregano and pepper until vegetables are tender. Beat egg whites until foamy; pour into skillet. Cook for 3 minutes over medium-low heat or until puffed and lightly browned on bottom.

Bake, uncovered, at 325° for 15 minutes or until egg whites are set. Invert onto a serving plate; cut into four wedges. Serve immediately.
