Frittata with chicken and baby spinach

Serves 4


-4 eggs

- ½ chicken breast (a big one)

- 1 onion

- 1 red bell pepper chopped

- 100 g baby spinach

- 1 tsp olive oil

- 2 tbsp crème fraîche (max 3% fat) – tolerated

- salt, pepper

How to prepare:

Preheat the oven to 180oC/350oF/Gas 4.

Sauté onion in olive oil in an oven-proof, stick-free skillet, until translucent, about 4-5 minutes on medium heat. Add the chicken breast cut into stripes (about 1 cm) and cook until turn white. Add then the chopped pepper and the baby spinach and cook for another 10 minutes.

Meanwhile combine the eggs with the crème fraîche in a jug and season well. Pour egg mixture over chicken and baby spinach mixture.

Put the whole pan in the oven and cook for about 30-35 minutes. Remove from oven with oven mitts and let cool for several minutes.
