Chicken rolls with zucchini


- 2 zucchini, thinly sliced crosswise

- 8 thin chicken cutlets, 3 oz each

- salt and fresh pepper

- oregano

- 1 egg

-Fat free cottage cheese

-Fresh parsley

How to prepare:

Preheat the oven to 180oC/350oF/Gas 4.

Wash and dry cutlets, season with salt and pepper. Slices of zucchini can be cooked on the grill until tender. Lay chicken cutlets down on a working surface and put 2-3 slices of zucchini, add the cottage cheese and chopped parsley.

Roll the chicken breast up into a roll and secure with toothpicks. Roll the chicken into the egg and allow excess to drip off. Add on top some oregano.  Place the chicken in the oven and cook for 35 – 40 minutes. Slice the chicken into coin shaped and serve with green beans, broccoli or any other steam vegetables.
