Chicken with lemon and zucchini

Serves 2


- 2 skinless chicken breast

- 2 zucchini, thinly sliced crosswise

- 1 leek, thinly sliced crosswise

- 2 cloves of garlic, crushed

- ½ lemon juice

- 1 tablespoon dried basil

- 1 tablespoon dried parsley

- Salt and pepper

How to prepare

Cut the chicken breast into strips. Sprinkle chicken breasts with salt and pepper.  It a hot pan sauté until cooked through, 10 to 12 minutes, turning once. Add the leak, zucchini and the garlic and cook for about 5 minutes. Add ½ cup of water, the basil, parsley and the lemon juice. Put a lid over and cook for another  15 minutes. Eat while is still hot.
