Tzatziki (greek cucumber salad)

Tzatziki is a Greek appetizer and is usually served as an accompaniment to meat, though it is suggested as a soup or a salad also.

Ingredients:

- 2 cucumbers, peeled, seeded and diced

- 2 tbsp chopped fresh dill

- 1 clove of garlic, minced finely

- 1 fat free greek yogurt

- salt, white pepper

Lemon curd roulade

Now I will show you what you can do with your lemon curd. A very tasteful dessert.

Ingredients for dough:

-4 tbsp oat bran

- 6 tbsp skimmed powder milk (considered adjuvant and allowed from attack phase, but limited to 3 tbsp/day)

- 2 tbsp fat-free cheese

- 2 eggs

- 1 tsp baking powder

- 3 tbsp sweetener (or to taste)

- vanilla flavoring

Lemon curd

I love this recipe that I have found it on Maria Martinez website.

Serves 2

Ingredients:

-2 eggs (for a more intense color you can add another  1-2 yolks)

- 2 tbsp fat-free cheese

- 2 tbsp of cornstarch

- juice of one large lemon

- 1 tbsp lemon zest

- 3-4 tbsp sweetener (or to taste)

How to prepare:

Cheese and smoked salmon roulade

Ingredients for dough:

-2 eggs

- 1 tbsp cornstarch

- 2 tbsp oat bran

- 2-3 tbsp skim milk

- salt

Ingredients for the filling:

-250 g low-fat cheese

- 4-5 slices of smoked salmon

- green onions finely chopped

-chopped dill

- salt
